1 c. white sugar
3 tbsp unsalted butter, room temperature
1 egg, beaten
1/2 c. cocoa, fill with boiling water to make 1 cup of liquid
1/2 tsp baking soda
1/2 c. boiling water
1 c. flour
1 tsp baking powder
Cream together sugar and butter; add egg and cocoa liquid. Mix soda and boiling water. Add all this to flour and baking powder, mix well. Pour into greased 9-inch square pan (the batter will be thin). Bake at 350°F for 30 minutes, or until a toothpick inserted in centre comes out clean. (This cake doubles well. Bake in a 9X13 -inch pan or a bundt pan for 40-50 minutes.)
